You can enjoy these landscapes everywhere in Tuscany, layer upon layer: from the layer of modernity (you never have to look long to find something that was added in the last 20 years or so: a wind farm, pylons, a motorway) to the monuments of our industrial past (railway bridges, traces of mining activity) and features that reach back hundreds of years to the Middle Ages (churches), antiquity (aqueducts) and beyond (such as settlement patterns, terraced hill farms and cleared woodlands).
This is what is known among historians as a palimpsest: What happens when you write on a surface without erasing what had been written there before. These “palimpsest” landscapes are great treasures.

This combination of features allows you to make more trips, in the past or in the guise of someone else: you will follow in the footsteps of an army that marched into a famous battle, for example, or of a famous artist on a journey that inspired one of his major works, or of traveling craftsmen, pilgrims and itinerant traders throughout the centuries.

Here you can go through a suggestive and impressive avenue of cypresses on board of a horse carriage. Towards of a magic scenery like we were returned in the past; the pace of the Tuscan countryside is marked by the slow gait of the horses.
The gaze is free to wander over fields dotted with old farmhouses that appear as tireless sentinels of these lands where, frequently, we are surprised by the flutter of a lone pheasant or by the sudden rush of a hare.
The countryside gradually gives way to the ancient oak woodland that, in some corners, is the setting for ponds populated by ducks and herons, surrounded by lush marsh vegetation and muffled by the morning mist. All these sceneries are crowned by lush vineyards of Sauvignon Blanc, Chardonnay, Vermentino, Sangiovese, Syrah and Cabernet Sauvignon.

And always to keep one foot in the past and one in the present, stay with us on Wednesday evening, because the craft brewery J63 inside of the Estate, proposes the menu “Once upon a time” with a selection of cold cuts and mixed cheeses on cutting board and the chicken “Alla cacciatora” which is a second dish of the Tuscan tradition, very well known and appreciated in our country
This recipe is very simple to prepare and very tasty thanks to the presence of savory ingredients such as onion, tomato, and red wine that enhance the flavor of the chicken.

The origins of this recipe, once again are to be found among poor people who used what they had on hand to nourish themselves. For this reason, the chicken which was bred by farmers, became during the holidays, a sumptuous meal enriched with vegetables and flavor of red wine just opened.
